Our favorite cup of coffee right now is the Danish Blend. It’s a delightful Danish blend of the finest dark and light roast coffee. Dark roast, smooth full bodied, clean finish, with ‘wake me up robustness’.
The brewing method and how fresh the coffee beans are make all the difference in flavor. We brew our coffee using the good ol manual pour-over, an apparatus – a grinder, a kettle, a chemex, a filter. It requires patience. It’s a process. The slow drip of the rich coffee into the hourglass flask reminds us that good things are worth waiting for. It’s an early morning ritual and meditation. It’s a science. The BLOOM is a science.
What is the coffee bloom? Many of you ask. When roasted coffee beans are ground the contained gasses are agitated and released more rapidly (the reason you should grind your beans and only use freshly roasted beans). When the piping hot water comes into contact with the fresh coffee grounds the gases are completely expunged, including carbon dioxide, and you witness the bloom – a literal puffing up when the piping hot water interacts with the grounds (see attached photo of the bloom). Bam! The Bloom! The fresher the beans the bigger the bloom. I feel the mini explosion in my face. You will hear a hissing sound. Giving your coffee 30 seconds to bloom (depending on how recently it was roasted) will enhance its flavors.
The next time you brew freshly roasted coffee at home, let your grounds bloom. Giving them a chance to breathe will ensure that you capture all of the fine notes of the coffee without the sourness that carbon dioxide provides.
Pour a small amount of piping hot (but not boiling) water over the coffee grounds, using a circular motion starting from the outside wall and working your way inward.
Once the bloom is over continue with the brewing process.
Another secret tip, pour the coffee through the filter a second time for strength, full body, and flavor. Talk about patience! The best things in life are worth waiting for.
