Gorgonzola Cremificato. Once you’ve had a mouthful of this grassy, relatively sweet, luscious and creamy cow’s-milk blue cheese from Lombardia, you won’t stop thinking about it. Much softer and more creamy in texture than Gorgonzola Dolce or Piccante, spoonable Cremificato makes a decadent dessert on its own. It’s delicious with fresh pears, apples, and a drizzle of honey with walnuts or pecans. Gorgonzola Cremificato goes well with wines like Pinot Blanc, Sauternes and Moscato Passito and it pairs well with a smoky single malt from Islay.
